Made from scratch using fresh ingredients
Approach: We make meals from scratch following Paleo/Primal guidelines, so there are no grains, legumes, soy or preservatives in our meals. We use lean meats, fresh fruits and vegetables, and healthy fats for nutritionally-dense food. We believe this is a feel-good baseline approach to eating for everyone.
Creative Recipes that are Healthy and Delicious: Two decades in fine dining and gourmet catering have taught me that preparing delicious food is a process. Paleo is definitely a process: trimming fresh meats; peeling, cutting, chopping fresh vegetables; and finding herbs and spices that burst with flavor take time. Since our food is Paleo, we don’t cheat by adding sugar, fat, or salt to increase flavor–we test and adjust everything we make until the entire team says, “Delicious.”
Portions: Each single-serving portion has 1 serving of protein and 2 servings of vegetables following the USDA guidelines for serving size. The USDA considers 1 serving of meat to be 3 to 5 ounces precooked and 1 serving of vegetables to be 1/2 cup precooked. For our plans, all meats are 5 to 6 ounce portions precooked, and vegetables are 1 cup post-cooked.
